There comes a time in life when our coordinates coincide with our origins, a time when we explain our vision of the world through our cuisine and our village: Benidoleig.
The taste memory of Valencian villages is becoming more and more relevant, because we cannot let our traditional recipes get lost and because social receptiveness has increased. Valencian women are at a key moment in which we increasingly appreciate our cuisine: red prawns from Dénia, "arroz a la muntanyeta", octopus with stalks and chickpeas, "curas", "coca de maíz" or baked rice (but made in the village's wood-fired oven).
Childhood, Sunday rice in the hut, our eyes hypnotised by the burning firewood and the bar, our favourite social network.
That is why, for so many things, Madre is born, a project of roots and appreciation, also the mutation of @suculentgilabert into a restaurant, together with the mother and her brother with their hands at the cooker.
Where we work with dishes prepared daily with the best products obtained from the countryside and from the Dénia fish market and cooked on the grill.
