Baby squid with onion and millenary olive oil (Farga Milenaria)

INGREDIENTS

250 g of baby squid | 100 g of onion | minced garlic and parsley | salt | olive oil Farga Milenaria


PREPARATION

  • Fry the onion lightly with Farga Milenaria olive oil in a paella pan.
  • Then add the baby squid and salt.
  • Once cooked, place them on a plate adding the minced garlic and parsley on top.
  • Finally, baste the dish with a touch of Farga Milenaria olive oil.

1 lobster of 1 kg | 500g of rice | 200 g of clams | ½ chopped onion | 3 cloves of garlic | 1 tomato | red pepper | green pepper | parsley | salt | sweet red paprika | fish broth | olive oil Farga Milenaria
For the fish broth: garlic | parsley | tomato | onion | ñora pepper| rock fish | 3 liters of water

Alcanar

The fertile lands of Alcanar, located in the very south of Catalonia, next to the river Sénia, have been cultivated since very ancient times. A testimony of this exploitation can be found in the Iberian village of la Moleta del Remei, located close to the hermitage of the same name which was surrounded by olive trees that were the most important crop of the town for centuries.
