Baldovar923 “close to the stars” was born as a dream of its four founders, based on the tremendous potential of the Serranía de Valencia to produce high quality wines, preserve the mountain varieties of grapes common to the Serranía de Valencia, and a commitment to minimise human intervention in the wine making process (craft, ecological and natural wines).
To make the dream a reality, we restored the wine cellars in the village of Baldovar (Alpuente), which was a winemaking cooperative that was closed more than 20 years ago, and started production in 2017.
The main focus of Baldovar 923 is on native varieties of grapes of the Serranía, especially the Merseguera. Our wines are made with grapes picked from 20- to 80-year-old vines made hardy by the local climate: high altitudes, cold, little water, clay and stone.
We have 10 hectares of vineyards in the mountain villages of the Serranía de Valencia, at 900m-1,200m height.
We make the wine with as little intervention as possible, both in the fields and in the cellar. We use local yeasts, without adding fining agents, nutrients or any other chemical agents. We follow the lunar cycle and apply ecological farming principles (awaiting certification). We use clay jars, French oak barrels and stainless-steel tanks.
